Ingredients

  • 6 flour tortillas (7-inches in diameter)
  • 2 tsp. olive oil
  • 1 medium onion, finely chopped
  • 1 sweet red pepper, cored, seeded and diced
  • 1 1/4 lb. ground turkey
  • 1/4 tsp. salt
  • 2 cloves garlic, minced
  • 1 tsp. each: ground cumin, chili powder and dried oregano
  • 1 jalapeno, seeded and chopped (optional)
  • 1/2 c. low-salt tomato sauce
  • 2 Tbsp. minced cilantro or mix parsley and cilantro
  • 1/2 c. grated Monterey Jack cheese
  • 1 c. salsa (optional)

Directions

    Preheat oven to 350°.

    Wrap tortillas in foil and heat in oven for 8 minutes.

    Meanwhile, in a 12-inch skillet, heat oil over moderate heat.

    Add onion and red pepper; saute, stirring occasionally, until onion is soft.

    Add the turkey and salt to the skillet; saute, stirring, until the turkey is no longer pink.

    Add the garlic, cumin, chili powder, oregano and optional jalapeno pepper.

    Saute, stirring, for 1 minute or until mixture is dry. Stir in the tomato sauce and cilantro.
