Turkey-Rice Bake

  • 1 can condensed cream of chicken soup
  • 1 3/4 c. water
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 c. instant rice
  • 6 Tbsp. grated Parmesan cheese
  • 1/2 tsp. salt
  • 2 c. cooked, diced turkey
  • 1 small pkg. frozen chopped broccoli, cooked and drained

Directions

    Combine soup, 1/2 cup water, mayonnaise and lemon juice. Blend 1 cup soup mixture, remaining water, rice, 2 tablespoons Parmesan cheese and salt in buttered 2-quart casserole. Top with turkey. Combine remaining soup mixture with broccoli.

    Pour over turkey and sprinkle remaining Parmesan cheese over top. Cover and bake in a 350° preheated oven for 20 minutes.

    Uncover and bake for 10 minutes longer.
