Turkey-Rice Casserole

  • 1 (6 oz.) box wild or white rice, uncooked
  • 1 can cream of mushroom soup
  • 1 c. chicken broth
  • 2 c. cooked, cubed turkey
  • 1 (4 oz.) small can sliced mushrooms
  • salt and pepper to taste

Directions

    Combine rice, soup and chicken broth in a 2-quart casserole. Cover and cook on High in the microwave for 10 minutes.

    Stir in turkey, mushrooms and salt and pepper.

    Cover and cook on High for 2 to 3 minutes or until rice is cooked.

    Let stand 5 minutes. Great use of leftover turkey!
