Ingredients
- 1 turkey carcass
- 3 qt. water
- 2 (10 1/2 oz. each) cans low-sodium chicken broth
- 1/2 c. uncooked long grain rice
- 1 medium onion, finely chopped
- 4 celery stalks, finely chopped
- 2 carrots, grated
- 1 bay leaf
- dash of poultry seasoning
- salt (optional)
- pepper
- onion powder
- garlic powder
Directions

1Place turkey carcass and water in a large soup kettle.

2Simmer over low heat for 4 to 5 hours.

3Remove carcass from stock. Remove any meat and dice.

4Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning.

5Add remaining seasonings to taste.

6Simmer over medium-low heat until the rice is cooked.

7Yield: 8 servings (3-quarts).
