Ingredients

  • 2 Turkey Drumsticks, cooked
  • 2 Turkey Wings, cooked
  • 8 quarts Chicken Stock
  • 2 Onions, chopped
  • 1 Bay Leaf
  • 1 tablespoon Salt
  • 1 teaspoon Pepper
  • 4 sprigs Parsley
  • 1/2 teaspoon Thyme
  • 2 cloves Garlic,chopped
  • 4 Carrots, thinly sliced
  • 1 bunch Celery, thinly sliced
  • 28 ounces Canned Chopped Tomatoes
  • 2 tablespoons Fresh Dill
  • 1 cup Rice

Directions

    Place turkey pieces in large soup kettle with broth. Simmer for 1 hour.

    Remove turkey bones and trim meat from bones and reserve.

    Add onions, bay leaf, salt, pepper, parsley, thyme and garlic. Bring to a boil and simmer 1 hour more.

    Add rest of ingredients except turkey meat. Simmer 35-45 minutes more. Add turkey meat and heat through.
