- 1 roasted turkey carcass
- 1 gal. cold water
- 1 large onion, quartered
- 1 large carrot, cut into large chunks
- 1 large stalk celery, cut into large chunks
- 2 cloves garlic, peeled
- 1 bay leaf
- 1/4 tsp. peppercorns
Directions

1Place turkey carcass in stockpot.

2Add enough water to cover carcass.

3Bring water to boil.

4Skim and discard foam from surface.

5Add remaining ingredients; stir.

6Simmer, partially covered, on medium-low heat 2 hours.

7Strain stock; discard bones and vegetables.

8Skim fat from stock.
