Turmeric Rice

Ingredients

  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 1/2 teaspoon chopped garlic
  • 1 cup converted rice
  • 1/2 teaspoon turmeric
  • 3 sprigs parsley
  • 2 sprigs fresh thyme or 1/4 teaspoon dried
  • 4 drops Tabasco sauce
  • 1 bay leaf
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste

Directions

    Heat 1 tablespoon of the butter in a saucepan and add the onion and garlic.

    Cook, stirring, until the onion is wilted.

    Add the rice, turmeric, parsley, thyme, Tabasco, bay leaf, water, salt and pepper.

    Bring to a boil, stirring.

    Cover and simmer 17 minutes.

    Discard the parsley and thyme sprigs and bay leaf.

    Add the remaining butter and toss the rice with a fork.
