  • 1 cup butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/4 cup all-purpose flour
  • 1 tsp baking soda
  • 3/4 cup cocoa powder
  • 1 cup chopped pecans
  • 1 tbsp white sugar
  • 48 caramel candies

    Beat butter until creamy.gradually beat in sugars.

    Beat in eggs and vanilla.

    Combine flour, baking soda and cocoa.

    Gradually add to butter mixture, make sure to mix Well.

    Add half pecans.

    Cover and chill for atleast 2 hours

    Preheat oven to 375F

    Combine remain 1/2 CUP of pecans with 1TBSP of sugar

    Divide the dough into four parts , work them as one part at a time leaving the remain dough in the fridge until u need it.

    Divide each part in to 12 pieces

    Quickly press each piece of dough around a caramel and roll into a ball.

    Dip the tops in the sugar mix and place on cookie sheet tops up two inchs apart

    Bake for 8 mins in preheated oven .

    Cool for 4 mins until transferring to wire racks to cool completely
