  • 1 lb cherry tomatoes
  • 4 oz pimento-stuffed green olives
  • 1/4 cup olive oil
  • 1 None lemon, juiced
  • 4 None chicken breasts, cut into 3 pieces
  • None None fresh basil leaves, to garnish
  • None None rice, to serve

Directions

    Preheat oven to 350°F. Toss tomatoes and olives with 2 tbsp oil and lemon juice. Set aside.

    Heat remaining oil in a frying pan. Season chicken then saute for 2-3 mins per side, or until golden. Transfer to a baking dish. Pour tomato mixture over top, toss well and season. Bake for 15-20 mins, turning once, until chicken is cooked through. Top with basil leaves and serve with rice.
