Ingredients

  • 2 c. sugar
  • 1/2 c. white corn syrup
  • 1/2 c. water
  • dash of salt
  • 2 egg whites
  • 1 tsp. vanilla

Directions

    Stir sugar into corn syrup, water and salt, until dissolved. Boil to medium-ball stage (240°).

    Beat egg whites until stiff. Pour 1/3 of syrup over egg whites.

    Beating constantly, cook remaining syrup to very hard ball stage (265°).

    Beat syrup into candy mixture.

    Continue beating until stiff.

    Cool 15 to 20 minutes, stirring occasionally.

    When mixture holds its shape when dropped from a spoon, add vanilla.

    Drop from teaspoon onto buttered cookie sheet.

    Makes 4 dozen pieces.
