Two Corn Casserole

Ingredients
- 1/2 c. margarine or butter
- 3/4 c. chopped green pepper
- 1/3 c. chopped onion
- 16 oz. can cream-style corn
- 16 oz. can whole kernel corn, undrained
- 3 eggs, well beaten
- 8 1/2 oz. pkg. corn muffin mix
- 1 c. shredded Cheddar cheese
Directions

1Heat oven to 350°.

2Grease 2-quart casserole.

3In small skillet, melt margarine.

4Saute green pepper and onion until crisp-tender.

5Combine both cans of corn, eggs and corn muffin mix in a large bowl.

6Mix well. Add skillet mixture.

7Blend well. Pour into casserole. Sprinkle with Cheddar cheese. Bake at 350° for 55 to 65 minutes or until firm and set.

8Let stand 5 minutes before serving.

9Delicious!
