Two Corn Casserole

Ingredients

  • 1/2 c. margarine or butter
  • 3/4 c. chopped green pepper
  • 1/3 c. chopped onion
  • 16 oz. can cream-style corn
  • 16 oz. can whole kernel corn, undrained
  • 3 eggs, well beaten
  • 8 1/2 oz. pkg. corn muffin mix
  • 1 c. shredded Cheddar cheese

Directions

    Heat oven to 350°.

    Grease 2-quart casserole.

    In small skillet, melt margarine.

    Saute green pepper and onion until crisp-tender.

    Combine both cans of corn, eggs and corn muffin mix in a large bowl.

    Mix well. Add skillet mixture.

    Blend well. Pour into casserole. Sprinkle with Cheddar cheese. Bake at 350° for 55 to 65 minutes or until firm and set.

    Let stand 5 minutes before serving.
