- 12 c. water
- 3 bay leaves
- 1 carrot
- salt
- 1 stalk celery
- 4 lb. fresh water fish in season
- 10 peppercorns
- 1 Tbsp. lemon juice
- 1 onion
- 1 parsnip
- 1 leek
Directions

1Boil water, then add carrot, celery, peppercorns, onion, parsnip, leek, bay leaves and salt to taste.

2Simmer 15 minutes; add 2 pounds (only) of the fish and cook until it begins to fall apart.

3Force this through a sieve; return to the pot, bring to a boil and add remaining 2 pounds of raw fish, which has been sliced.

4Cook about 15 minutes; add lemon juice before serving.
