"Unfried" Chicken

  • 1 cup coarsely crushed corn flakes
  • 1 Tbsp. flour
  • 1 tsp. seasoned salt
  • 1 egg white
  • 1 Tbsp. water

    Preheat oven to 400F.

    Combine cereal crumbs, flour and salt in shallow dish or pie plate.

    Beat egg white and water in shallow bowl.

    Dip chicken pieces in egg white mixture, then in cereal mixture, turning over to evenly coat both sides.

    (For the breasts and thighs, dip just the meaty side in the coatings.)

    Arrange chicken on baking sheet, placing the breasts and thighs coating-sides up; spray chicken lightly with cooking spray.

    Bake 40 min.

    or until chicken is golden brown and cooked through (180F).
