Unstuffed Cabbage

  • 6 c. chopped cabbage
  • 1/2 lb. ground beef
  • 1 small onion, chopped
  • 1 c. uncooked instant rice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 (10 3/4 oz.) cans condensed tomato soup (undiluted)
  • 1 c. water
  • 1/3 c. shredded Cheddar cheese

    Place the cabbage in a greased 2 1/2-quart baking dish. In a skillet, cook beef and onion until done. Stir in rice, salt and pepper, if desired. Spoon over cabbage. Combine soup and water; pour over beef mixture. Cover and bake at 350° for 40 to 50 minutes or until rice and cabbage are tender. Uncover. Sprinkle with cheese. Bake 5 to 10 minutes longer or until cheese is melted. Makes 4 servings.
