Unstuffed Peppers

Ingredients

  • 1 lb lean ground beef
  • 1 large onion, diced
  • 2 cups brown rice
  • 1 (14 1/2 ounce) can diced tomatoes, any flavor
  • 1 (14 1/2 ounce) can tomato sauce
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 teaspoon garlic
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 32 ounces chicken stock
  • 2 tablespoons beef stock granules
  • 2 cups water
  • 3 large bell peppers, diced (red, green, yellow)
  • shredded cheese (optional topping)
  • fresh cracked black pepper (optional topping)

Directions

    Brown the meat with the diced onion in a large soup pot.

    Add everything except the peppers and toppings and bring it to a boil.

    Reduce heat, cover and simmer for 20 minutes.

    Add peppers, cover and simmer for another 30 minutes.

    Serve with or without toppings.
