Upside-Down Berry Cake

  • 1/4 c. plus 2 Tbsp. sugar
  • 3 Tbsp. butter
  • 4 c. smashed berries
  • 1/2 c. sugar
  • 1/4 c. flour
  • 1 yellow pudding in the mix cake mix
  • 1 c. water
  • 1/3 c. oil
  • 3 eggs
  • 1 tsp. vanilla

Directions

    Place first sugar and butter in 9 x 13-inch pan and bake for 3 to 5 minutes at 350°.

    Remove from oven and mix, spreading evenly. Mix together berries, 1/2 cup sugar and flour.

    Pour over butter mixture.

    Mix remaining ingredients until moist.

    Pour over berries, spreading evenly.

    Bake at 350° for 50 to 55 minutes. Run knife around edge to loosen cake.

    Turn upside down on serving tray.

    Serve warm or cold.
