- 12 Tbsp. butter (room temperature)
- 1 c. brown sugar
- 1 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2/3 c. white sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. milk
Directions

1Melt 4 tablespoons butter and brown sugar in a 9-inch cake pan.

2Arrange pineapple slices and cherries in sugar mixture.

3Any fruit may be used.

4In bowl, combine flour, baking powder and salt.

5Beat remaining 8 tablespoons butter and white sugar until fluffy.

6Beat in eggs and vanilla.

7Beat in half the flour, then milk and finally remaining flour.

8Spread over pineapple.

9Bake at 350° for 30 to 35 minutes until toothpick stuck in center comes out clean.

10Cool 3 minutes; turn onto a platter.

11Leave 1 minute before removing pan.
