Upside-Down Onion Corn Bread

  • 3 c. thinly sliced onion rings
  • 3 Tbsp. butter or margarine
  • 1 (8 1/2 oz.) pkg. corn bread mix

Directions

    In skillet, saute onion rings in butter until soft, about 5 to 8 minutes.

    Spoon into bottom of an 8 x 8 x 2-inch baking pan. Prepare corn bread mix according to package directions.

    Pour batter over onions and spread evenly.

    Bake in preheated 350° oven for 25 to 30 minutes or until done. Turn out onto serving plate. Cut into squares. Serve hot.
