Ingredients

  • 2 1/2 c. sifted flour
  • 1 1/2 c. sugar
  • 3 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. Crisco
  • 3/4 c. milk
  • 1/4 c. cherry juice
  • 1 tsp. vanilla
  • 2 tsp. almond extract
  • 4 egg whites
  • 18 cherries, well drained and finely chopped
  • 1/2 c. walnuts

    Sift dry ingredients into a mixing bowl and add shortening. Combine milk and cherry juice in a separate cup.

    Add 3/4 cup of liquid to dry ingredients.

    Add flavorings and beat for 2 minutes. Add remaining liquid and egg whites; beat for 2 minutes.

    Add cherries and nuts; blend.

    Pour into greased and floured pan. Bake at 375° for 1 hour in a tube pan for 20 to 25 minutes for layers.
