- 12 pig's feet split the long way (makes 2 pans)
- herbs, spices, hot peppers, amounts according to taste
- juice of 1 lemon
- allspice, whole, to taste
- 2 stalks celery (especially that old stuff hanging around the fridge)
- lots of fresh chopped garlic, at least 6 cloves
- 2 good size onions, chopped
- seasoned salt, soul seasoning, etc.
- colivita vinegar, to taste
Directions

1Put all ingredients in a large pot of water, enough to completely cover the trotters.

2Boil until feet are soft, just about all day.

3When done, arrange feet in shallow baking dish, using slotted spoon to avoid excess liquid.

4Coat feet liberally with your favorite barbecue sauce; one that is spicy and full of smoke flavor.

5Bake at 350°, uncovered, until edges of brown begin to show, usually about 1 hour.
