Vanilla Custard & Passionfruit Scrolls

Ingredients
- 300 g self-raising flour (2 cups)
- 2 tablespoons icing sugar
- 80 g butter, chilled and chopped
- 125 ml milk (1/2 cup)
- 125 ml vanilla custard (1/2 cup)
- 2 tablespoons passion fruit pulp, fresh
- 45 g icing sugar (1/4 cup)
- 1 tablespoon fresh passion fruit pulp
Directions

1Preheat oven to 210C

2Line a baking tray with a non-stick baking paper.

3Place the flour, icing sugar and butter in food processor bowl and process until the mixture resembles fine breadcrumbs.

4Add the milk and process until dough just starts to come together.

5Turn dough, onto a clean surface and knead until smooth.

6Roll out the dough on non-stick baking paper to a 25 x 35cm rectangle.

7Spread the dough evenly with the custard and top with the passionfruit pulp.

8Starting with the long side closest to you, roll up firmly to form a log.

9Trim the ends and discard.

10Cut crossways into 8 even portions.

11Arrange the portions, cut-side up, side by side and just touching each other, on the lined tray.

12Bake in oven for approx 20 minutes or until golden, remove and drizzle with the passionfruit icing.

13Whilst the scrolls are baking make icing ~.

14To mke the passionfruit icing, place the icing sugar and passionfruit pulp in a small bowl and stir until well combined.

15Use a fork to drizzle icing over the scrolls.

16Serve warm.
