  • FOR THE DRESSING:
  • 3 Tablespoons Red Wine Vinegar
  • 1 Tablespoon Dark Sesame Oil
  • 2 teaspoons Finely Grated Ginger
  • 1 teaspoon Soy Sauce
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Pepper
  • FOR THE RICE SALAD:
  • 2/3 cups Wild Rice (i Use The Pre-cooked From Trader Joe's, The Whole Package)
  • 1 teaspoon Dark Sesame Oil
  • 1 teaspoon Soy Sauce
  • 1-1/2 cup Shredded Cooked Chicken (I Grill Mine And Just Cut It Into Small Pieces)
  • 1 cup Snow Peas Cut Up
  • 1/2 cups Sweet Red Pepper, Chopped
  • 1/3 cups Scallion, Sliced
  • 1/3 cups Currants, Dried

    1. Mix dressing ingredients. Set aside.

    2. Cook rice with oil and soy sauce (or just add the oil and soy sauce to pre-cooked rice).
