- 1/4 c. butter, melted
- 1/4 c. flour
- 1 c. scalded milk
- 1/4 c. sugar
- 3 eggs, separated
- 1 tsp. vanilla
Directions

1Melt butter in pan.

2Add flour, milk and sugar.

3Boil to thicken.

4Beat egg yolks in bowl and add vanilla.

5Add to first mixture. Stir until thoroughly mixed.

6Fold in stiffly beaten egg whites.

7Pour into greased baking dish.

8Set in pan of hot water and bake at 350° for 45 to 50 minutes or until souffle is firm to the touch.

9Serve immediately.
