  • 2-3/4 cups Milk
  • 1 Egg, Beaten
  • 1/3 cups Honey
  • 2 Tablespoons Instant Tapioca Mix (like Kraft)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Grated Lemon Zest, Optional

Directions

    1. In a medium saucepan (off the heat), whisk milk, egg, honey, and tapioca until combined. Allow to sit 5 minutes.

    2. Then bring milk mixture to a boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and lemon zest if desired. Let the mixture sit 20 minutes. It will thicken into a custard-y pudding during this time. Refrigerate 1 hour if you like your pudding cold. Or serve warm.
