- 5 or 6 cooked potatoes, peeled, sliced or diced
- 1 c. milk
- 1 Tbsp. butter or margarine
- 1 Tbsp. minced parsley
- 1 clove garlic, minced
- 1 onion, minced
- 1 tsp. oregano
- salt and pepper to taste
- 3/4 c. shredded Cheddar or Monterey Jack cheese
Directions

1Melt butter, saute onion and garlic.

2Blend in 3 tablespoons flour and stir until bubbly.

3Add milk and stir until sauce thickens.

4Add potatoes and seasonings.

5Turn into greased pan and bake, uncovered, 35 to 40 minutes at 375°.
