  • 5 or 6 cooked potatoes, peeled, sliced or diced
  • 1 c. milk
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. minced parsley
  • 1 clove garlic, minced
  • 1 onion, minced
  • 1 tsp. oregano
  • salt and pepper to taste
  • 3/4 c. shredded Cheddar or Monterey Jack cheese

Directions

    Melt butter, saute onion and garlic.

    Blend in 3 tablespoons flour and stir until bubbly.

    Add milk and stir until sauce thickens.

    Add potatoes and seasonings.

    Turn into greased pan and bake, uncovered, 35 to 40 minutes at 375°.
