  • 2 Tbsp. Crisco oil
  • 4 (7 oz. each) veal shoulder chops
  • 1/4 c. flour
  • 1/3 c. finely chopped shallots or white part of green onions
  • 1 1/4 c. chicken broth
  • 1 Tbsp. catsup
  • 2 tsp. Dijon style mustard

Directions

    Heat oil in large skillet over moderate heat.

    Coat chops with flour, shaking off excess.

    Brown chops in skillet on both sides, about 5 minutes per side.

    Remove to a plate.
