- 4 (7 oz. each) veal shoulder chops
- 1/4 c. flour
- 1/3 c. finely chopped shallots or white part of green onions
- 1 1/4 c. chicken broth
- 1 Tbsp. catsup
- 2 tsp. Dijon style mustard
Directions

1Heat oil in large skillet over moderate heat.

2Coat chops with flour, shaking off excess.

3Brown chops in skillet on both sides, about 5 minutes per side.

4Remove to a plate.
