Veal Curry With Carrots

  • 300 g veal, thinly sliced
  • 4 large carrots, grated
  • 1 leek, chopped
  • 1 cup coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon tomato paste
  • 2 teaspoons oil
  • 1 teaspoon ground cumin
  • 14 teaspoon salt, to taste
  • 1 tablespoon coriander, chopped (optional)

Directions

    Heat oil over medium high heat and brown veal, stirfrying till browned all over,.

    Add curry paste and stir through, then add tomato paste,salt, leeks and cumin.

    Add carrots and coconut milk and cook over medium heat for about 15 minutes or until carrots are soft and most of the coconut milk has been absorbed.

    Sprinkle with coriander and serve with fried roti and sweet chilli sauce.
