Veal With Scallops

Ingredients
- 1 lb. veal cutlets
- 1/2 lb. scallops
- 1 small green pepper
- 1/2 c. sliced mushrooms
- salt and pepper to taste
- 1 c. chicken broth
- 1/2 c. white wine
- 2 Tbsp. olive oil
Directions

1Cut veal into 2-inch pieces, dredge in flour, shake off excess flour.

2Brown in two tablespoons olive oil, remove from pan.

3Add peppers and mushrooms to pan and cook until tender.

4Add scallops and cook until tender.

5Remove from pan.

6Add chicken broth and simmer for one minute.

7Add veal, peppers, mushrooms and scallops and simmer until veal is tender.

8Add wine and cook one minute more.

9Serve with cooked noodles or rice.
