  • 2 T. Earth Balance
  • 1 T. orange zest
  • 6 oz. coffee, cooled
  • 1 c. dates, chopped
  • 1 1/2 t. EnerG egg replacer mixed with 4 T. Water
  • 1 c. brown rice syrup
  • 2 T. orange juice
  • 3/4 c. whole wheat flour
  • 1 1/2 c. all-purpose flour
  • 1 t. baking soda
  • 1/2 t. cinnamon
  • 1/4 t. nutmeg
  • 1/4 t. ginger

Directions

    Pour coffee over dates, soak and then drain, reserving both dates and coffee. Beat together egg replacer and brown rice syrup. Add orange juice and coffee and mix well. In a separate bowl, combine the dry ingredients. Add to the liquid ingredients and mix to combine. Stir in dates. Pour into a loaf pan lined with parchment and greased. Bake at 350 degrees for 60-70 minutes until a toothpick comes out clean.
