  • 7.5 cups flour
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon

  • 1 tablespoon ground ginger
  • 1 1/2 teaspoons ground white pepper
  • 3/4 teaspoon coriander
  • 1 Tbsp salt
  • 2 1/4 cups sugar
  • 4.5 oz candied ginger, chopped
  • zest of 2 large oranges
  • 1 cup + 2 tablespoons applesauce
  • 2 1/4 cups canola oil
  • 2 1/4 cups molasses
  • 1/4 cup ginger juice
