Vegetable And Cheese Stuffed Shells

- 2 c. chopped broccoli
- 1 c. shredded carrots
- 1/2 c. chopped onion
- 1 clove garlic, chopped fine
- 2 Tbsp. vegetable oil
- 1 Tbsp. flour
- 1/2 c. milk
- 1 1/2 c. lite cottage cheese or lite Ricotta cheese
- 1/4 c. Parmesan cheese
- salt and pepper to taste
- 8 to 10 cooked jumbo shells
Directions

1Cook vegetables in oil until tender.

2Stir in flour and milk; cook until thickened.

3Remove from heat.

4Add cottage cheese, 2 tablespoons Parmesan cheese, salt and pepper.

5Stuff shells, put in shallow baking dish.

6Top with remaining Parmesan cheese. Bake, covered, at 325° for 25 minutes.
