Vegetable And Cheese Stuffed Shells

Ingredients

  • 2 c. chopped broccoli
  • 1 c. shredded carrots
  • 1/2 c. chopped onion
  • 1 clove garlic, chopped fine
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. flour
  • 1/2 c. milk
  • 1 1/2 c. lite cottage cheese or lite Ricotta cheese
  • 1/4 c. Parmesan cheese
  • salt and pepper to taste
  • 8 to 10 cooked jumbo shells

Directions

    Cook vegetables in oil until tender.

    Stir in flour and milk; cook until thickened.

    Remove from heat.

    Add cottage cheese, 2 tablespoons Parmesan cheese, salt and pepper.

    Stuff shells, put in shallow baking dish.

    Top with remaining Parmesan cheese. Bake, covered, at 325° for 25 minutes.
