- 1 lb. ground beef
- 1 Tbsp. salad oil
- 6 bouillon cubes
- 6 c. boiling water
- 4 c. diced tomatoes (or canned)
- 2 c. cubed potatoes
- 2 c. diced celery
- onions (optional)
- 1 c. grated carrots
- 1 c. green beans
- 1 c. diced zucchini
- 1 c. shredded cabbage
- 1/4 c. parsley
- 2 tsp. salt
- 1/4 tsp. pepper
Directions

1Brown beef in oil.

2Add bouillon cubes, then boiling water. Cover and bring to boil.

3Then simmer gently until done.

4This soup is superb.

5Stores well and freezes well in tightly covered containers.

6Makes 3 to 4 quarts.
