- 1/3 c. margarine, melted
- 1 egg
- 2 tsp. water
- 1/2 c. flour
- 1/2 tsp. salt
- 2 c. fresh cut-up vegetables (1/4-inch carrot slices, broccoli flowerets, cauliflowerets, 1/2-inch zucchini slices, 1/2-inch strips green or red peppers)
Directions

1Preheat oven to 450°.

2Grease 9 x 13-inch pan with 1 tablespoon of melted butter.

3Beat egg and water.

4In separate bowl, mix flour and salt.

5Dip 1/4 of vegetables into egg mixture. Remove one piece at a time and roll in flour mixture.

6Place in greased pan.

7Repeat with remaining vegetables.

8Pour remaining melted butter over vegetables.

9Bake, uncovered, turning once, until vegetables are crisp-tender and golden brown, 10 to 12 minutes; drain.

10Sprinkle with Parmesan cheese.

11Makes 2 cups.
