- 2 med. carrots, in 2 inch pieces
- 2 med. onions, quartered
- 3 celery ribs, with tops,in 2 inch pieces
- 2 peeled fresh plum tomatoes
- 1 bay leaf
- 1 small bunch parsley
- 1/2 tsp. salt
Directions

1In large saucepan place ingredients.

2Cover with 3 quarts of water and bring to a boil.

3Reduce heat to moderately low and simmer for 2 hours.

4Strain before using.

5Can be refrigerated for up to 3 days or frozen for up to 3 months.

6Some sort of noodles can be added when serving.
