Ingredients

  • 2 med. carrots, in 2 inch pieces
  • 2 med. onions, quartered
  • 3 celery ribs, with tops,in 2 inch pieces
  • 2 peeled fresh plum tomatoes
  • 1 bay leaf
  • 1 small bunch parsley
  • 1/2 tsp. salt

Directions

    In large saucepan place ingredients.

    Cover with 3 quarts of water and bring to a boil.

    Reduce heat to moderately low and simmer for 2 hours.

    Strain before using.

    Can be refrigerated for up to 3 days or frozen for up to 3 months.

    Some sort of noodles can be added when serving.
