Vegetable Casserole

Ingredients

  • 2 cans Veg-All
  • 1 can water chestnuts, sliced
  • 1/3 lb. grated Cheddar cheese
  • 1 c. mayonnaise
  • 1 chopped onion
  • 1 can mushrooms, chopped
  • 1 stack Ritz crackers, crushed
  • 1 stick margarine
  • 1 can cream of mushroom soup

Directions

    Mix mayonnaise, soup, onions and cheese.

    Add vegetables, water chestnuts and mushrooms.

    (Sometimes I add or substitute broccoli and/or cauliflower or corn or English peas.

    I just use whatever I have.)

    Pour into casserole dish and top with cracker crumbs that have been mixed with melted margarine.

    Bake at 350° until slightly brown.
