- 1 c. chopped onions
- 1 c. diced bell pepper
- 1 c. diced celery
- 1 c. grated Cheddar cheese
- 1 c. mayonnaise
Directions

1Bring mixed vegetables to a boil. Drain. Add remaining ingredients and mix.

2Place in a 9 x 13-inch casserole dish. Top with cracker crumbs and drizzle with 1 cube melted butter. Bake at 350° for 35 minutes.
