  • 1 (16 ounce) package frozen mixed vegetables, small cut
  • 1 cup mayonnaise
  • 1 cup onion, chopped
  • 1 cup cheese, grated
  • 1 (8 ounce) can sliced water chestnuts (optional)
  • 1 (4 ounce) package Ritz crackers, crushed
  • 12 cup margarine, melted

Directions

    Cook vegetables until tender.

    Saute the onion in small amount of oil.

    Mix vegetables, onions, mayonnaise, cheese, and water chestnuts together and pour into a 9by13 inch dish.

    Top with crushed Ritz crackers.

    Drizzle melted margarine over the Ritz.

    Bake at 375F for 15 minutes or until bubbly.
