- 1 1/4 c. self-rising cornmeal
- 1/2 c. self-rising flour
- 2/3 c. milk
- 1/4 c. melted butter
- 1 egg
- 1 small zucchini, shredded
- 1/4 c. chopped roasted red pepper
- 1/4 c. sugar
Directions

1Preheat oven to 400°.

2Grease 9-inch round baking pan; set aside.

3Combine cornmeal, flour and sugar.

4Add milk, butter and egg.

5Stir until moistened.

6Fold in zucchini and roasted red pepper. Bake 20 to 25 minutes until toothpick inserted into center comes out clean.

7Cool on wire rack 10 minutes.
