- 2 c. chopped tomatoes (about 2 large)
- 1 (15 oz.) can garbanzo beans
- 1/2 c. chopped red bell pepper
- 1/2 c. chopped green onions
- 1 Tbsp. chopped fresh oregano
- 1 tsp. paprika
- 1 tsp. olive oil or vegetable oil
- 5 c. hot cooked couscous
- 1/4 c. grated Parmesan cheese
Directions

1Heat all ingredients except couscous and cheese to boiling in a 2-quart saucepan.

2Serve over couscous.

3Sprinkle with cheese. Makes 6 servings.
