- 1 can kidney beans
- 4 1/4 c. water
- 1 package fresh broccoli/cauliflower-floret mix
- 1 tsp. curry powder
- 1/4 c. chutney
- 1 1/2 tsp. grated peeled fresh ginger
- 1/4 tsp. salt
Directions

1In 4-quart saucepan, heat 4 cups of water to boiling.

2Add vegetable mix and cook 4 minutes or just until tender.

3Drain in colander.

4Dry saucepan.

5In same pan, toast curry powder on medium for 30 seconds.

6Stir in beans, chutney, remaining water, ginger, and salt.

7Cook for 2 minutes.

8Stir in broccoli mix.

9Spoon over rice.
