  • 1 can kidney beans
  • 4 1/4 c. water
  • 1 package fresh broccoli/cauliflower-floret mix
  • 1 tsp. curry powder
  • 1/4 c. chutney
  • 1 1/2 tsp. grated peeled fresh ginger
  • 1/4 tsp. salt

Directions

    In 4-quart saucepan, heat 4 cups of water to boiling.

    Add vegetable mix and cook 4 minutes or just until tender.

    Drain in colander.

    Dry saucepan.

    In same pan, toast curry powder on medium for 30 seconds.

    Stir in beans, chutney, remaining water, ginger, and salt.

    Cook for 2 minutes.

    Stir in broccoli mix.

    Spoon over rice.
