- 6 zucchini
- 3 Tbsp. butter
- 1/4 lb. mushrooms, diced
- 2 Tbsp. minced onion
- 1/2 c. shredded Cheddar cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. water
- 1 c. carrots, diced
Directions

1Cut zucchini in half, scoop out pulp and dice.

2Saute in butter with mushrooms, carrots, onions, salt and pepper.

3Stir in cheese.

4Fill shells, place in narrow baking dish.

5Pour water around the zucchini.

6Cover with foil and bake at 375° for 20 minutes.
