Vegetable Fried Brown Rice

  • 3 whole Eggs
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Ginger, Minced
  • 3 cloves Garlic
  • 23 cups Onion
  • 1 cup Carrots
  • 1 cup Broccoli
  • 1 block (400g Size) Tofu
  • 2- 1/2 Tablespoons Soy Sauce
  • 1- 1/2 teaspoon Sesame Oil
  • 3 cups Brown Rice, Cooked
  • 1 cup Frozen Peas
  • 3 stalks Green Onion, Sliced

    Scramble eggs in a small pan.

    Set aside.

    In a large pan over medium high heat, saute garlic, ginger, onions and carrots in olive oil.

    After 34 minutes, add broccoli and desired protein (I used tofu).

    Add soy sauce and sesame oil.

    Add brown rice, frozen peas and scrambled eggs.

    Using a spatula, flatten and press rice into the pan.

    Allow the rice to crisp.

    Stir again and flatten into pan.

    Continue until rice reaches desired crispness.

    Serve with green onions!
