Vegetable Fried Brown Rice

- 3 whole Eggs
- 1 Tablespoon Olive Oil
- 1 Tablespoon Ginger, Minced
- 3 cloves Garlic
- 23 cups Onion
- 1 cup Carrots
- 1 cup Broccoli
- 1 block (400g Size) Tofu
- 2- 1/2 Tablespoons Soy Sauce
- 1- 1/2 teaspoon Sesame Oil
- 3 cups Brown Rice, Cooked
- 1 cup Frozen Peas
- 3 stalks Green Onion, Sliced
Directions

1Scramble eggs in a small pan.

2Set aside.

3In a large pan over medium high heat, saute garlic, ginger, onions and carrots in olive oil.

4After 34 minutes, add broccoli and desired protein (I used tofu).

5Add soy sauce and sesame oil.

6Add brown rice, frozen peas and scrambled eggs.

7Using a spatula, flatten and press rice into the pan.

8Allow the rice to crisp.

9Stir again and flatten into pan.

10Continue until rice reaches desired crispness.

11Serve with green onions!
