Vegetable Fried Rice

  • 1/4 cup vegetable oil
  • 3 None large eggs, beaten
  • 6 oz bacon, sliced
  • 5 oz baby corn, finely sliced
  • 2 cloves garlic, finely sliced
  • 3 1/4 cups cooked jasmine rice
  • 6 oz frozen peas, thawed
  • 4 None spring onions, finely sliced
  • 1/4 cup soy sauce
  • 2 tsp sesame oil

Directions

    In a wok or large frying pan, heat 1 tbsp oil on high until very hot. Pour in eggs, swirling around base and sides. Cook 2-3 mins, until just set. Slide onto a cutting board, roll up and roughly chop.

    Heat remaining oil in wok until very hot. Stir-fry bacon 2-3 mins, until crispy and browned. Add corn and garlic. Stir-fry 1 min. Add rice to wok and stir, gently breaking up clumps with a spoon. Add peas, onion, soy sauce and sesame oil. Stir-fry 3-4 mins, until well-combined and hot. Toss in egg and serve immediately.
