Vegetable Fried Rice

  • 2 Tbsp. peanut oil
  • 2 eggs, lightly beaten
  • 1/2 c. chopped green onion
  • 1 tsp. chopped garlic
  • 3 c. cold cooked white rice
  • pinch of sugar
  • 2 Tbsp. soy sauce
  • 1/2 c. bean sprouts
  • 1/2 c. frozen peas
  • 1/2 c. frozen corn
  • sesame seed

Directions

    Add 1 tablespoon of oil to hot wok or skillet.

    Add eggs and lightly scramble.

    Remove eggs and add another tablespoon of oil. Stir-fry onions and garlic for 1 minute.

    Add cold white rice, sugar and soy sauce.

    Stir together until heated through.

    Stir in vegetables and add scrambled eggs.

    Sprinkle with sesame seed.
