- 2 Tbsp. peanut oil
- 2 eggs, lightly beaten
- 1/2 c. chopped green onion
- 1 tsp. chopped garlic
- 3 c. cold cooked white rice
- pinch of sugar
- 2 Tbsp. soy sauce
- 1/2 c. bean sprouts
- 1/2 c. frozen peas
- 1/2 c. frozen corn
- sesame seed
Directions

1Add 1 tablespoon of oil to hot wok or skillet.

2Add eggs and lightly scramble.

3Remove eggs and add another tablespoon of oil. Stir-fry onions and garlic for 1 minute.

4Add cold white rice, sugar and soy sauce.

5Stir together until heated through.

6Stir in vegetables and add scrambled eggs.

7Sprinkle with sesame seed.
