- 3 Tbsp. olive oil
- 2 small zucchini, sliced
- 3 medium size potatoes, peeled, cooked and sliced
- 8 pitted black olives, sliced
- 1/3 c. milk
- 1/4 tsp. white pepper
- 2 Tbsp. chopped parsley
- 1 onion, chopped
- 1 large red pepper, cut into strips
- 8 eggs
- 1/2 tsp. salt
- 1/2 c. grated Parmesan cheese
Directions

1In a large skillet, heat olive oil and saute onion for 5 minutes.

2Add zucchini

3and red pepper and saute for 5 minutes or until soft.

4Stir in potatoes and olives.
