  • 1 pkg. soft tofu, drained and rinsed
  • 2 eggs
  • 1 c. oatmeal
  • 1/2 c. milk
  • 1/2 c. grated carrots
  • 1 red bell pepper, chopped
  • 1/2 c. grated squash (yellow or green)
  • salt and pepper to taste

    Mix ingredients; form into patties (flat).

    Cook in frypan with small amount of oil.
