  • 1 meaty ham bone
  • 6 cup water
  • 2 beef bouillon cubes
  • 3 tbsp tomato paste
  • 1/2 head red cabbage
  • 1 cup sliced carrots
  • 6 mushrooms (quartered)
  • 3 green onions
  • 1 yellow squash
  • 2 cup frozen french cut green beans
  • 1 cup fresh frozen peas
  • 1 tsp garlic salt (optional)
  • 1 tsp sage
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp ground cloves
  • 1 large bay leaf

Directions

    Remove skin, ligaments, and fat from the meaty ham bone.

    Boil/simmer bone until meat falls off (~1 hr.)

    Remove and reserve meat.

    For low fat version discard liquid, otherwise skim fat and reserve liquid.

    Add bouillon cubes and water or reserved liquid to crockpot.

    Add tomato paste to crockpot and stir.

    Add ham to crockpot

    Coarsely chop vegetables and add to crockpot.

    Add water to cover contents.

    Add spices, stir, cover and cook on low ~6 hours or until carrots are done.
