Vegetable Hamburger Pie

Ingredients

  • 1/2 c. chopped onion
  • 1 Tbsp. vegetable oil
  • 1 (16 oz.) can tomatoes
  • 2 tsp. salt
  • 1 tsp. parsley flakes
  • 1 (10 oz.) pkg. frozen green peas, thawed
  • 2 cloves minced garlic
  • 1 1/2 lb. ground chuck
  • 1 (6 oz.) can tomato paste
  • 1/4 tsp. pepper
  • 1 (17 oz.) can whole kernel corn, drained
  • 8 or 10 unbaked biscuits

Directions

    Saute onion and garlic in oil about 5 minutes or until tender. Add beef and cook until brown, stirring occasionally.

    Drain; add tomatoes, paste, salt, parsley and pepper.

    Simmer for 15 minutes. Stir in corn and peas.

    Pour into a 13 x 9 x 2-inch baking dish. Place biscuits on top and bake at 350° or until golden brown.
