- 3 c. sliced zucchini
- 2 c. sliced mushrooms (8 oz.)
- 1 c. chopped onions
- 3 cloves garlic, chopped
- 1 Tbsp. oil
- 1 (26 oz.) jar of pasta sauce
- 1 tsp. oregano
- 1 (16 oz.) lite or no fat cottage cheese
- 1 c. grated Parmesan cheese
- 1/2 to 1 lb. lasagna noodles
- 2 c. Mozzarella cheese (8 oz.)
Directions

1Cook vegetables and garlic until tender.

2Stir in pasta sauce and oregano; simmer 15 minutes.

3Combine cottage cheese and Parmesan in a bowl.

4In a 13 x 9-inch dish, layer 1/2 each of the noodles, sauce, cottage cheese and Parmesan mixture, plus 1/2 of Mozzarella.

5Repeat layering and cover and bake for 45 minutes at 350°.

6Uncover for 15 minutes more.

7Let stand 15 minutes.
