- 1 jar meatless spaghetti sauce
- 6 to 9 lasagna noodles
- 1 onion, chopped
- 8 to 10 mushrooms, sliced
- 1 green pepper, chopped
- 2 tsp. oil
- 1/2 pkg. chopped broccoli
- 1/4 tsp. garlic
- 1 c. Mozzarella
- 1 c. cottage cheese
- 1 egg
Directions

1Fill large saucepan half full with water; boil.

2Add lasagna noodles and 1 teaspoon oil.

3Cook on medium heat for 7 to 9 minutes.

4Drain noodles and rinse in cool water.

5In a frying pan, saute onion, mushrooms and green pepper in 1 teaspoon oil.

6Steam broccoli in about 1 inch water.

7Add broccoli to sauteed mixture and remove.

8In a bowl, mix cheese, cottage cheese and egg.

9Layer noodles, vegetables, sauce and cheese, ending with cheese.

10Bake in oven until cheese is melted.
